Summary of Project and Key Findings:
A project funded by the Bioresource Processing Alliance and co-funded by Aotearoa Grown was carried out to develop a process for producing a powdered fermented papaya product.
The highlights and major outcomes of the work were as follows:
- Papaya was successfully fermented at lab scale using a low-tech and cost-effective process
- Fermented papaya was freeze-dried and milled to give a powder containing live microorganisms as well as high levels of certain bioactives
- Live microorganisms were shown to be present after 3+ months storage
