Summary of Project and Key Findings:
This report seeks to quantify and characterise non-exported kōura/lobster (Jasus edwardsii) whole fish or parts produced at Port Nicholson Fisheries (PNF), and explore potential opportunities for adding value to these by-product streams. The project was supported by a Bioresource Processing Alliance “Stage 0” scoping grant.
A calculator table was produced that summarises published data on the composition of kōura/rock lobster for the purpose of estimating biochemical product yields from different body parts.
There is potential to utilise the cephalothorax (head/body, limbs and viscera/guts) that remains after tailing and process it into a French style lobster soup (termed bisque) in a pouch as a consumer ready product. To keep the proportions of shell:meat:viscera the same as a whole lobster the cephalothorax would need to be treated with High Pressure Processing and hand shucked to allow for efficient separation of these elements.
