Summary of Project and Key Findings:
Apple processing industries generate large volume of side streams, which include peel, flesh and seeds. These materials can be separated and used as a raw material to make products or ingredients from them. These side streams are usually a low value by-product used in animal feed, juice, purees, etc. or worse, dumped in landfills.
In this project the separation, stabilisation, apple peel/flesh powder production and apple peel extract processes were scaled up and optimised. Additionally, this project suggests solutions for the liquid streams generated during the production of apple powders and extracts. We found that apple peel, flesh and seed can be effectively separated, and all these apple components can be transformed in apple peel/flesh powders and apple peel extracts.
