Summary of Project and Key Findings:
Apple peel of multiple varieties was processed at pilot scale by washing and pressing before drying and extracting for triterpenoids. Wet extraction was also performed to compare yield and composition and scalable partial purification methods were developed. Analytical methods were modified to help with characterising the composition of these complex extracts. Green apple variety was found to have slightly different composition to red apple variety tested. Bioassays were performed to determine antioxidant and enzyme inhibition of these extracts, and some were shown to have reasonable activity.
