Summary of Project and Key Findings:
Processing of the seed ingredients was replicated at scale to prove repeatability and feasibility. Multiple products were successfully developed using kabocha and pumpkin seed powders to prove its versatility. Product quality was maintained by using new processing methods developed specifically for this material.
