Summary of Project and Key Findings:
Kumara vines are a byproduct from the growing of kumara, which are currently returned to soil. They have traditionally also been used as a source of food. Methods for washing, drying and size reduction of kumara vines were trialled, and the effects of these techniques on the composition of vines and the levels of bioactive compounds were determined. These trials were carried out on several varieties of kumara.
Additionally, a series of processes to create added value and added activity fractions was trialled.
